Cupcakes, cupcakes, cupcakes...

So as I believe I said in my last post, I have been in Scotland for the past 3 months and opened a cupcake delivery business for an Entrepreneurship class I took here. We called it The Cupcakery St Andrews and delivered fresh cupcakes on Saturdays and Sundays to people's houses or dorms. It was hugely successful and definitely key to my learning about running a food business, which can only help with my dream to open a catering business or bakery within the next few years!

We offered 4 basic flavors each week: chocolate, vanilla, carrot, and red velvet. For the first few weeks, we offered pumpkin spice latte cupcakes, and the remaining two weeks of operation we offered peppermint frosting for chocolate and vanilla cupcakes. We catered a number of events with cupcakes, and even had our business featured in the school's online newspaper!

Chocolate Chip Cookie Dough Frosting

For one of our weekly specials at The Cupcakery, we offered Cookie Dough Frosting for vanilla or chocolate cupcakes. People loved them and they were a lot of fun to make!

I got the recipe from Eva Bakes, though mixing any eggless cookie dough batter into regular vanilla buttercream should work! I cut the cookie dough recipe in half since I was not stuffing my cupcakes with cookie dough as she does.



Cookie Dough Frosting

1/4 cup butter (softened)
1/8 cup white sugar
1/4 cup brown sugar
1/8 cup whipping cream
1 tsp vanilla
1/2 cup flour
1/4 cup salt
1/3 cup mini chocolate chips

3/4 cup butter (softened)
2 cups powdered sugar


Beat the butter and sugars at medium speed until fluffy. Slowly pour in the cream and vanilla and continue to mix. Stir in the flour and salt.

In a separate bowl, beat the butter until creamy. Add the powdered sugar one cup at a time until smooth. Beat in the cookie dough.

While she put the chocolate chips on top, I decided to put them in the frosting so that there would be no "boring" parts of the frosting while one was eating them. Though this made it a bit harder to pipe, I think they still turned out looking pretty good!
